Wa Gyuto was organised by a friend for another friend’s birthday dinner, so I had no say in the matter. Boy oh boy was I glad to have no say in the matter - it was perfect. Wa Gyuto has the ambience of a wine bar - dimly lit and sexy as hell, it also scores bonus points for having Delamere on the wine list.

We were a group of eight, so dined on the set menu. We started with sushi and miso soup, before moving on to the daily steamed bun with tempura sand whiting and yuzu tartare, as well as tuna tartare with buttermilk avocado, tabouli & yuzu ponzu.

Before diving into the main, I have to first tell you a short story. My brother Fraser and I were accidentally raised by our parent’s as food snobs. It wasn’t their fault, they are excellent cooks, and have a high standard for quality Tasmanian ingredients. This sadly sets you up for food disappointment when something isn’t up to the standard you are used to. Inadvertently, Frase and I will be eating, make eye contact, and just know that we are thinking “dad does it better”. HOWEVER, this night we broke the spell, because although Papa Sim cooks a bangin’ steak - this one tops it (sorry pa). The wagyu steak with charred onion and kombu butter was something I’ll dream about.

All up, this meal cost us less than $100 a head (win) and we left with full tummies.
